testicles from cattle. When young bulls were "cut" (castrated) and became steers/bullocks at branding time, the removed testicles were referred to as prairie oysters. Some people used to BBQ and eat them, but I have never eaten them: prairie oysters - testicles from cattle. Also, mountain oyster.
